Your info is completely false and biased. Fibre isn't required at all, you just need to eat enough fat and it comes out smooth, in fact many switching to carnivore have the opposite problem, before they are fat adapted they eat too much fat and get diarhea. Meat does contain vitamin C in small amounts, enough (carbs compete with vitC for uptake, so no carbs means low VitC requirement.
You can eat fermented foods on carnivore, the scientific definition of a hyper-carnivore is 70% or more from meat so there's plenty of room in the carnivore diet for e.g. sauerkraut or kimchi, it is not verbotten. People on carnivore have had their microbiome tested and the results are excellent. A meat based diet is anti-imflammatory.
Nitrogen isotope testing shows that early humans and hominids were 90% or more carnivore for around 3-4million years. When humans switched to plants e.g. 20-15 thousand years ago, our brains shrunk, our physical size shrank, we started getting tooth decay (which didn't exist prior) and started getting chronic diseases. The fruits you buy in shops now are nothing like the fruits that existed even a few thousand years ago – and in nature they typically only exist for a few weeks per year.

Tried carnivore / keto / vegetarian/ vegan and none of them helped me ! I was eating too many calories period ! No matter what diet you do you MUST BE IN A CALORIC DEFICIT TO LOSE FAT !
