All this talk about vegetables. What about other foods. We prepare a large quantity of her bands on black beans which we freeze after cooking for an hour and 1/2 or so. Then I take out a 1 quart Ziploc container at a time to eat them from. Do the ones remaining in the container, now only in the refrigerator, not the freezer, start to acquire endotoxin's?
I thought I'd read that some veggies are better if you chop them first. I think this applied to cruciferous veggies. I'll search for the previous info bc I think it was from this site.
There are all kinds of dried vegetables too that come in handy during winter etc. i use dried tomatoes and peppers and spices are all dried plant material. Is a puzzlement? Guess I will go with my gut, and if GI objects will have to make a change.

was aware of this effects for years … FRESH IS BEST. I try to Aways prepare fresh, Few minutes extra time means fresher, healthier YOU in Future. — Just see how much time is wasted on TV per day etc… then see how much time you spend preparing fresh Salad, etc… Crystal Clear it is !
The pre chopped veggies are what tips the balance for me on some days to still eat healthy haha
That's something typically American, everything "pre-chewed" and packed in a lot of plastic. Just rip open and eat. I think in the USA they have the worst eating culture. Rip open, if necessary microwave, and eat. No talent or brains needed.
So what happens if I pre chop my own and freeze them?

When I cut up my pineapple, I put it in the freezer. It would mildew in the refrigerator after awhile, but doesn't in the freezer.
Could be frozen or canned is the best way to go. Recently heard that produce that’s grown to be frozen or canned tends to have lower amounts of pesticides, etc. And pathogens are not an issue. Frozen and canned are also picked closer to full ripeness. That’s why a can of tomatoes will almost always taste better than a tomato you buy in the produce aisle that was picked green two weeks ago. Those canned tomatoes were picked ripe. One problem though, you can’t buy frozen salad greens.

I wonder what this would mean for meal prepping too? It’d be nice if there was a paper showing the change in inflammatory status over time. Like how soon after freshly chopping should you consume the foods?
Does it justify the time loss of chopping yourself?

What about cooked and refrigerated leftovers? Does this only apply to raw vegetables?

I wonder what the study would find with frozen chopped vegetables vs if we bought whole vegetables, chopped and froze them for meal prep ourselves? We've always been taught that the store bought frozen were "just as healthy or better than fresh" because they are flash frozen. Side note: My horse will not eat baby carrots but loves big whole carrots broken into smaller pieces. I always thought that it was because of the bleach wash process that they go through. I stopped buying the baby carrots because of this.
Makes me wonder about spices. We mostly use whole and grind them fresh for better flavor, but the same issues probably apply to preground. Hopefully at a lower level because spices are higher antibiotic than veg.
What I don't get is: how are Fermented vegetables healthy then? Like shouldn't bacteria that can process these kinds of substrates be healthy?
