Some hams are produced without any sort of preservatives, only salt and, in the case of Parma, salt and sugar.
Do your own research. The paper actually says 'the sodium nitrite reacted with dimethylamine (which is normally found in fish) to produce a potent nitrosamine carcinogen'. One google search will tell you that dimethylamine is mainly found in fish and seafood, not pork. In the UK it's mainly pork that is preserved with sodium nitrite. So ham is ok. Again please do your own research. Youtubers make money from their niche. They tell you what suits them.

Except that in curing (when done correctly), the nitrites are gone before you eat it, or it wouldn't be cured at all. It is in fact the bacterial or antioxidant reduction of nitrites into nitric oxide that does the curing. When you eat the product, that has already taken place and plays no part in your digestion.Â

The line at the very end by the meat industry concerning ham is one for the ages. They don't have to worry about information and truth affecting their market because the people consuming it are driven simply by taste.
